Every great cook has a solid grasp of cooking techniques and a thorough understanding of her ingredients. Cooking Intensives at Purple Kale Kitchenworks are designed to teach both. Every class is designed and taught by chef Ronna Welsh.
In addition to our Basic Knife Skills class, we are offering the following Intensives this fall:
Fish Butchery and Cooking
Learn how to stuff, fillet, skin, roast, sear, and poach fish, as well as make three accompanying sauces: Tahini-miso, Brown butter-caper, and Saffron-tarragon

Chicken Butchery and Cooking
Learn how to butcher a whole chicken and roast, sear, braise, and poach its parts. You’ll also make three accompanying sauces: Chermoula, Soy-poblano, and Mustard aioli
